Credit to Mr Doobs for mentioning this to me:
Autoheal will monitor containers with built in health checks like plex, and auto restart them if they go unhealthy:
On host:
Code:
sudo docker run -d \
    --name autoheal \
    --restart=always \
    -e AUTOHEAL_CONTAINER_LABEL=all \
    -v /var/run/docker.sock:/var/run/docker.sock \
    willfarrell/autoheal
In portainer:
Open plex
Click duplicate/edit
Click labels tab
Click add label
Add label "autoheal" with a value of "true", all lower case no quotes. Click deploy.

Now whenever plex goes unhealthy autoheal will restart it for you.
