[NOOB] From unencrypted to encrypted

I am currently running PlexGuide on a Hetzner VPS, using G Suite. When I first installed PlexGuide a couple of months ago, it was recommended not to use an encrypted drive. Things seem to have changed now.

Is there a benefit to encrypt my media folders? If yes, is there a way to switch from unencrypted to encrypted?

What are the drawbacks of encryption (CPU time for instance)?

You could try to implement EncFS. I've found that Plex works much better with EncFS rather than rclone crypt when it comes to both scanning new media and seeking mid-stream.

Seems too complicated for me at the moment.
Underlying question: is it important to encrypt media files?

As stated by others and myself previously it is a matter of choice.
the SLIGHT seek time difference between en and un are a small price to pay for peace of mind.
it is a matter of fact that google are able to scan your files.
Personally i have never used it but might do so in future if it ever seems like the Big G get more invasive.
