Mine has just done the same!

Seems to have vanished from my system and cannot even reinstall

Yeah, i had same issue earlier. You have to wait some time, or you can try creating a Docker account and then authenticating.

Could you give me some help on what I need to do in order to do this? I have a docker account, do I just need to subscribe to the next level up from free? Then how would I apply this to the PG docker build for Plex please?

In your console, type
docker login
then it will ask for your username and password. input those and you should be good
